Slow Cooker Beef Shredded Tacos

I have been making a super yummy dinner lately and I wanted to share it with you guys today. I've been pulling my slow cooker out more and more these days since Campbell has baseball. We get home late and are super hungry after his games or practices so it's nice to have something warm and ready to go when we get back home. 

When I first made this I didn't have a recipe. I went to Fresh Market and thought shredded beef tacos sounded good and assumed if I added in a little of this and that it would probably taste good and it ended up being delicious so we have had this on repeat.

Ingredients:

1 lb flank steak 
1 can of whole kernel corn (drained)
1 can of black beans (drained)
1 can of diced green chilis
1 can of diced tomatoes
1 package of Fontera Ground Beef Taco Skillet Sauce (I get the sauce at Fresh Market)

I set my slow cooker on low, place the flank steak in and salt it a good bit. Throw everything else on top then let it cook for 6-8 hours. About an hour before I think it may be done I shred the beef apart and let it cook a little longer. That's all there is to it. Super easy and seriously delicious. I actually choose to eat mine as a bowl and I'll top with a little shredded cheese, sour cream, and jalapenos but I have had it as tacos and they are so yummy. 
I'm always proud of myself when I throw something together and it ends up tasting super delicious. Having it be low key cooking and an easy clean-up makes it even better!!
